track LALSuite rebrand in docs

• LALSuite has been rebranded to "LVK" https://git.ligo.org/lscsoft/lalsuite/-/merge_requests/2222

(I googled to check on the old confusion between "LIGO" and "LSC" and gwpy docs came up high)
